The Laotian-born top chef looks back on years of experience in Asian fusion cuisine in restaurants in Miami or Las Vegas and luxury hotels worldwide and therefore knows how to surprise even the most demanding palates. Nigiri, sashimi, maki and inside-out rolls line up here alongside vegan sushi, ceviche, sturgeon caviar and a variety of oysters.
