Edelweiss Mountain Cuisine

Whether traditional home cooking, creative dishes from all over the world or vegan delicacies, we only use locally-sourced, seasonal ingredients in our cuisine. This allows the rich flavour of the products to fully unfold in the dish.
We don’t just define guiding principles, we live them every day.

We locally source as much produce as we can in our cuisine. We know the local producers and suppliers personally. Our dairy products come from Grossarl farmers, meat products from our own butcher and bread either from the local baker or from our chefs. True to the cycle of nature, every ingredient comes into our cooking pots at its peak – whether wild garlic, mushrooms or asparagus.

We take this colourful mix of fresh produce and prepare traditional dishes in the same way as they were prepared in yesteryear. Our menu also includes international delicacies. We simply put a new twist on them by using our own regional produce. Vegetarians and vegans also ex-perience the full gamut of creative dishes – exceptional food from breakfast to dinner.
